Chicken Cacciatore

  1. Combine first 4 ingredients; mix well.
  2. Dredge chicken in flour mixture.
  3. Melt 1/4 cup plus 2 tablespoons butter in a large skillet; add chicken, several pieces at a time, and brown on both sides.
  4. Remove chicken from skillet; place in a lightly greased shallow roasting dish.
  5. Set aside.
