Cannelloni With Cheese And Spinach Recipe

  2. Cook the spinach, following the instructions on the packet.
  3. Put the lasagne in a bowl and pour boiling water over to cover.
  4. Leave to soak for two min.

  6. Meanwhile, put the ricotta, mascarpone, egg yolk and Parmesan in a food processor and mix.
  7. Add in the liquid removed spinach and process again.
  8. Season with salt, pepper and nutmeg.

  10. Preheat the oven to 180C/350F/Gas
  11. 4.
  12. Put a spoonful of the mix on a liquid removed sheet of lasagne.
  13. Fold over to enclose the filling and place in a greased ovenproof dish, folded side down.
  14. Repeat till all the lasagne is used up, then pour the sauce over and sprinkle with mozzarella.
  15. Bake for 30 min till golden brown.
