Japanese Fruit Cake
- 1 c. margarine
- 2 c. sugar
- 4 eggs
- 1 c. buttermilk
- 3 c. sifted plain flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. cloves
- 1 tsp. nutmeg
- 1 tsp. soda
- 1 c. chopped nuts
- 1 c. raisins
- 1 lb. mixed fruit
- 2 small cans cherries
- 1 small can crushed pineapple
- Mix the mixed fruit, cherries, pineapple, raisins and nuts; set aside.
- Cream margarine and sugar together.
- Add eggs, one at a time, beating well after each addition.
- Sift all dry ingredients together.
- Combine with fruit mixture.
- Add to batter; mix well.
- Pour in 3 (8-inch) cake pans.
- Bake at 350u0b0 until sides leave pan.
