Portuguese Feijoada With Lima Beans Recipe

  1. Place the beans in a pot, add in the cool water, and soak overnight.
  2. Heat the oil and lard in a large, heavy kettle.
  3. Add in the onions, carrots and garlic and saute/fry over moderate heat 12-15 min, stirring.
  4. Reduce heat to low.
  5. Cover and steam vegetables 20 min.
  6. Add in the beans and their soaking liquid, the ham, prosciutto, 3 sausages, parsley, bay leaves and tomatoes.
  7. Bring to simmer.
  8. Cover and simmer 40 min or possibly till the beans are hard tender.
  9. Remove ham, prosciutto, and sausages and cut them into bite-size pcs.
  10. Return to kettle.
  11. Add in white pepper, black pepper and cayenne.
  12. Stir well and cover.
  13. Cook another 1 1/2 hrs or possibly till beans are done, stirring every 30 min and adding a little water to prevent scorching.
  14. Remove bay leaves before serving.
  15. Serve in deep soup plates.
