Broccoli Rice Medley Recipe
- 2 c. cooked wild rice (white acceptable)
- 1 teaspoon salt
- 1 (10 ounce.) pkg. frzn minced broccoli, thawed & liquid removed or possibly 1 bunch fresh cooked & minced
- 8 ounce. fresh mushrooms, sliced
- 1 c. julienne strips of cooked ham
- 1 c. julienne strips of Swiss cheese
- 1/4 c. mayonnaise
- 1/2 pt. lowfat sour cream
- 2 tbsp. vinegar (malt preferred)
- 1/2 teaspoon sugar
- 1/4 teaspoon fresh pepper
- Salt to taste
- 1/2 teaspoon garlic pwdr
- Spoon rice into large bowl.
- Add in broccoli, mushrooms, ham and cheese.
- Place remaining ingredients in blender container or possibly jar with tight fitting lid, cover and blend.
- Stir mix into rice.
- Cover and chill till chilled, 2 hrs at least.
- Serves about 10 to 12.
