Baked Apples Filled with Granola Streusel Recipe

  1. Heat the oven to 375 degrees F.
  2. To make the streusel, in a bowl, stir together the melted butter and vanilla.
  3. In another bowl, combine the flour, oats, almonds, sugar, and salt and stir together with a fork.
  4. Add the butter mixture to the flour mixture and stir until evenly blended and crumbly (the streusel will be slightly wet).
  5. Stuff the core of each apple with streusel, dividing it evenly between the apples.
  6. Place the stuffed apples in a glass baking dish, large enough to just fit the apples but spacing them evenly so they are not touching.
  7. In a saucepan over medium-high heat, stir together the brown sugar, water, and a pinch of salt.
  8. Bring to a boil, stirring, then pour the sauce evenly over the apples in the dish.
  9. Bake, spooning the sauce over the apples a few times during baking, until the apples are tender, about 45 minutes.
  10. Serve warm with the sauce.
