Baked Apples Filled with Granola Streusel Recipe
- 5 tablespoons unsalted butter (a scant 2/3 stick), melted
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/3 cup old-fashioned oats
- 1/3 cup chopped toasted almonds
- 1/3 cup dark brown sugar
- Pinch kosher salt
- 4 to 6 sweet-tart baking apples, peeled and cored but left whole
- 1 cup light brown sugar
- 3/4 cup water
- Kosher salt
- Heat the oven to 375 degrees F.
- To make the streusel, in a bowl, stir together the melted butter and vanilla.
- In another bowl, combine the flour, oats, almonds, sugar, and salt and stir together with a fork.
- Add the butter mixture to the flour mixture and stir until evenly blended and crumbly (the streusel will be slightly wet).
- Stuff the core of each apple with streusel, dividing it evenly between the apples.
- Place the stuffed apples in a glass baking dish, large enough to just fit the apples but spacing them evenly so they are not touching.
- In a saucepan over medium-high heat, stir together the brown sugar, water, and a pinch of salt.
- Bring to a boil, stirring, then pour the sauce evenly over the apples in the dish.
- Bake, spooning the sauce over the apples a few times during baking, until the apples are tender, about 45 minutes.
- Serve warm with the sauce.
