Uncle Mark's Squash Casserole Recipe
- Summer squash, sliced 1/2" thick
- 2 onions, chopped
- 8 ounce. lowfat sour cream
- 1 can cream of mushroom soup
- 1 pkg. Stove Top stuffing for chicken
- Cook several squash slices 1/2 inch thick.
- Mince 2 onions and boil with squash till semi tender.
- Drain and set aside.
- Mix 1 (8 oz) container lowfat sour cream with the mushroom soup and set aside.
- Cook 1 package of Stove Top and in a large casserole layer 1/2 of the squash and sauce mix with 1/2 of the stuffing.
- Repeat another layer and bake at 300 degrees for 20 min.
- Serves 8.
