Pickled Red Onions
- 1 cup white vinegar
- 14 cup brown sugar
- 1 pinch salt
- 1 bay leaf
- 5 allspice berries
- 5 whole cloves
- 5 black peppercorns
- 1 cinnamon stick
- 1 small dried red chili pepper
- 1 large red onion, peeled and thinly sliced into rings
- 1 large carrot, peeled and julienned
- In a small, non-reactive saucepan, combine everything except the onion and carrot.
- Bring to a boil.
- Add onion and carrot, return to the boil, lower heat and simmer 1 minute.
- Allow to cool to room temperature.
- Transfer to a clean jar and refrigerate.
