Pickled Red Onions

  1. In a small, non-reactive saucepan, combine everything except the onion and carrot.
  2. Bring to a boil.
  3. Add onion and carrot, return to the boil, lower heat and simmer 1 minute.
  4. Allow to cool to room temperature.
  5. Transfer to a clean jar and refrigerate.
