Alton Brown's Carrot Cake

  1. Preheat oven to 350.
  2. Butter and flour 9 inch round, 3 inch deep cake pan.
  3. Mix dry ingredients together (except the sugars) then add to grated carrots.
  4. Mix the sugars, eggs, oil and yogurt in a separate bowl.
  5. Stir this mixture into the carrot mixture.
  6. Pour into cake pan and bake on middle rack for 45 min at 350.
  7. Then bake for 20 more min at 325.
  8. Cool completely before frosting.
  9. Cream cheese frosting: 8oz cream cheese, 2 oz unsalted butter, 1 tsp vanilla, 9 oz powdered sugar
