Alton Brown's Carrot Cake
- 12 oz Flour
- 12 oz Grated carrots
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/4 tsp All spice
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 tsp Salt
- 1 1/3 cup Sugar
- 1/4 cup Dark brown sugar
- 3 Eggs
- 6 oz Plain yogurt
- 6 oz Oil
- Preheat oven to 350.
- Butter and flour 9 inch round, 3 inch deep cake pan.
- Mix dry ingredients together (except the sugars) then add to grated carrots.
- Mix the sugars, eggs, oil and yogurt in a separate bowl.
- Stir this mixture into the carrot mixture.
- Pour into cake pan and bake on middle rack for 45 min at 350.
- Then bake for 20 more min at 325.
- Cool completely before frosting.
- Cream cheese frosting: 8oz cream cheese, 2 oz unsalted butter, 1 tsp vanilla, 9 oz powdered sugar
