St. Pattys White Chocolate Pie
- 3 qt. chocolate chip cookies (2 inch), finely crushed
- 1 cup butter, melted
- 5-1/3 cups white chocolate, finely chopped, divided
- 2 qt. Hot prepared JELL-O Vanilla Pudding & Pie Filling
- 8 each chocolate chip cookies (2 inch), coarsely broken
- 40 drops green food coloring
- 3 qt. prepared DREAM WHIP Whipped Topping
- For each pie: Mix 3 cups (13 oz.)
- cookie crumbs and 1/4 cup (2 oz.)
- butter until well blended; press onto bottom and up side of 9-inch pie plate.
- Refrigerate until ready to fill.
- Combine 3-1/2 oz.
- white chocolate and 2 cups hot pie filling; stir until chocolate is completely melted.
- Pour into prepared crust.
- Refrigerate several hours or until filling is firm.
- Melt 5 oz.
- of the remaining chocolate; cool to 90 degrees F. Spread onto parchment paper-lined sheet pan to 1/8 inch thick; top with 2 broken cookies.
- Let stand until chocolate is firm.
- Coarsely break into pieces.
- Stir food coloring into whipped topping.
- Spread 3 cups whipped topping over pie, mounding slightly in center.
- Garnish with white chocolate-cookie pieces.
