St. Pattys White Chocolate Pie

  1. For each pie: Mix 3 cups (13 oz.)
  2. cookie crumbs and 1/4 cup (2 oz.)
  3. butter until well blended; press onto bottom and up side of 9-inch pie plate.
  4. Refrigerate until ready to fill.
  5. Combine 3-1/2 oz.
  6. white chocolate and 2 cups hot pie filling; stir until chocolate is completely melted.
  7. Pour into prepared crust.
  8. Refrigerate several hours or until filling is firm.
  9. Melt 5 oz.
  10. of the remaining chocolate; cool to 90 degrees F. Spread onto parchment paper-lined sheet pan to 1/8 inch thick; top with 2 broken cookies.
  11. Let stand until chocolate is firm.
  12. Coarsely break into pieces.
  13. Stir food coloring into whipped topping.
  14. Spread 3 cups whipped topping over pie, mounding slightly in center.
  15. Garnish with white chocolate-cookie pieces.
