Vivons Kentucky Pudding Pie
- 3/4 c. butter
- 3 eggs, beaten
- 2 1/2 c. sugar
- 1 Tbsp. flour
- 1 c. milk
- 1 tsp. vanilla
- 2 c. butter or oleo
- 3 c. sugar
- 5 eggs
- 4 1/2 c. unbleached flour (sift 1 time, measure, then sift 2 more times)
- 3 c. dried apples that have been stewed
- 1 1/2 tsp. soda (put in apples)
- 1/2 box white raisins
- 1 1/2 c. pecans
- 1 1/2 tsp. each: mace, cloves and cinnamon
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- Cream butter and sugar.
- Add eggs, one at a time.
- Add 4 cups of flour alternately with stewed apples.
- Dredge raisins and nuts with remaining 1/2 cup flour.
- Add spices.
- Fold in cherries and pineapple.
- Add raisins and nuts last.
- Line greased tube pan with wax paper.
- Bake 2 hours at 250u0b0.
- Makes 2 large cakes.
- Halve recipe for one.
- Freezes nicely.
