Crunchy Oriental Chicken Salad
- 2 Tbsp. margarine or butter
- 1 (3 oz.) Oriental flavor Ramen noodles
- 2 Tbsp. sesame seed
- 1/4 c. sugar
- 1/4 c. vinegar
- 1 Tbsp. vegetable or sesame oil
- 1/2 tsp. pepper
- 2 c. cut-up cooked chicken
- 1 can mandarin orange sections, drained
- 1/4 c. dry-roasted peanuts
- 4 green onions, sliced
- 1 pkg. (16 oz.) cole slaw mix
- Heat margarine in skillet over medium heat until melted.
- Stir in seasoning packet from noodles.
- Break block of noodles into bite-size pieces; stir into margarine mixture.
- Cook and stir 2 minutes; add sesame seed.
- Cook and stir about 2 minutes longer or until noodles are golden brown.
- Mix sugar, vinegar, oil and pepper in large bowl.
- Add noodle mixture and remaining ingredients, toss. Yields 6 servings.
