Italian Style Chicken
- 2 whole chicken breasts, boneless
- 1 c. cracker crumbs
- 1/4 c. grated Parmesan cheese
- 2 eggs, well beaten
- 1/2 c. margarine
- 1/4 lb. mushrooms, sliced
- 1/3 c. cooking wine
- 4 slices Mozzarella cheese
- Pound chicken to flatten.
- Mix cracker crumbs and Parmesan cheese.
- Coat chicken pieces in crumb mixture, then dip in egg. Return pieces to crumb mixture, coating well.
- Melt margarine in skillet over medium heat.
- Add chicken and brown on both sides. Remove chicken to shallow baking dish.
- Add mushrooms to skillet and heat through, stirring frequently.
- Mix in wine.
- Pour over chicken.
- Cover; bake at 350u0b0 for 15 minutes.
- Uncover and place Mozzarella cheese on each chicken breast.
- Return to oven and bake for 5 minutes.
