Easy Eggs Benedict

  1. Bring a saucepan of water and the vinegar to simmer.
  2. Crack each egg into a cup.
  3. Stir around edges of pan with a spoon in one direction to create a whirlpool.
  4. Carefully slip egg into the middle of the pan and gently simmer for 3-4 minutes or until yolk is softly boiled.
  5. Remove with slotted spoon; keep warm and repeat with remaining eggs.
  6. Spread toasted muffins with 1 tablespoon of cream cheese spread and top with leg ham and egg.
  7. Drizzle with warmed cream cheese spread.
  8. Serve.
