Squash Cake
- 3 eggs
- 1 c. vegetable oil (I use Mazola)
- 2 1/2 c. sugar
- 2 c. unpeeled zucchini or cocozel squash, grated coarsely*
- 3 c. flour
- 1 tsp. soda
- 1/4 tsp. baking powder
- 1 Tbsp. cinnamon
- 1/2 tsp. salt
- 1 c. raisins or currants
- 1/2 c. chopped nuts
- 1 tsp. lemon flavoring
- 2 tsp. vanilla
- Beat eggs until fluffy.
- Add vegetable oil, sugar and zucchini or cocozel squash.
- Sift together the flour, soda, baking powder, cinnamon and salt.
- Add raisins or currants, chopped nuts, lemon flavoring and vanilla.
- Bake at 325u0b0 for 1 1/2 hours in prepared tube pan.
- Cool 10 minutes before removing from pan (you may put in 2 loaf pans and bake at 350u0b0 for 1 hour).
