Mexican Shepherds Pie
- 1 lb ground beef
- 1 (12 ounce) can sweet corn
- 1 (1 1/4 ounce) package taco seasoning
- 12 cup shredded cheddar cheese
- 1 (4 ounce) package Jiffy cornbread mix
- 1.
- Preheat oven to 400 degrees.
- 2.
- Brown the meat in a skillet.
- 3.
- Add taco seasoning and a little water as per the instructions on the seasoning packet.
- 4.
- Prepare the cornbread mix as instructed on the box in a bowl.
- 5.
- After the meat is done, pour into a 9" by 9" casserole dish and mix in the corn and a handful of the cheese.
- Stir together well.
- 6.
- Pour the cornbread mix on top of the meat mixture in the casserole dish.
- 7.
- Sprinkle some cheese on top of the cornbread and bake in the oven for about 20 minutes or until a tooth pick comes out clean.
- Serve hot!
