Crab and Dill Loaf
- 1 12 cups flour
- 1 12 teaspoons baking powder
- 3 eggs
- 13 cup olive oil
- 13 cup milk
- 4 ounces gruyere cheese, grated
- 8 ounces fresh figs, chopped
- 6 ounces crabmeat, diced
- 4 sprigs fresh dill, chopped or 2 teaspoons dried dill
- salt and black pepper, to taste
- Preheat oven to 350 degrees F.
- Sift together the flour and baking powder.
- In a bowl, beat the eggs, oil, and milk together.
- Season with salt and pepper.
- Carefully fold the egg mixture into the flour to make a smooth batter.
- Add the cheese, figs, crab meat and the fresh dill.
- Stir gently.
- Lightly butter a loaf pan and dust with flour.
- Pour in the mixture.
- Bake for 50 minutes.
- Check for doneness by sticking the blade of a knife into the loaf-it should come out dry.
- Cool the loaf before removing from the pan.
- Cut into small cubes and serve.
