Peggy Mann Fruit Cake
- 1 stick butter
- 1 c. sugar
- 1 can apple pie filling
- 2 c. plain flour (I use Red Band)
- 2 tsp. soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1 1/2 c. raisins or currants
- 1 1/2 c. white raisins
- 2 c. candied cherries
- 2 c. nuts
- Melt in saucepan the butter, sugar and apple pie filling. Remove from heat and set aside to cool.
- Mix together the fruit and nuts.
- Sift together the dry ingredients over the fruit and nuts.
- Mix until they are well coated.
- Fold in pie filling mixture and mix thoroughly.
- Bake in tube pan for 1 1/2 hours, or until done in a preheated 325u0b0 oven.
- Wrap in foil when cold.
- May be eaten soon, or will keep for 3 or 4 weeks.
