George'S Heart-Healthy Peach Ice Cream
- 2 (13 oz.) cans evaporated skim milk, undiluted
- 2 1/2 c. sugar
- egg substitute equal to 4 eggs
- 1/2 (3 oz.) pkg. peach Jell-O
- 1/8 tsp. salt
- 1 Tbsp. vanilla extract
- 6 to 8 c. skim milk or reconstituted nonfat dry milk
- 2 c. peaches
- Scald evaporated skim milk.
- Mix together sugar, egg substitute, Jell-O and salt with electric mixer, beating 5 minutes on medium to high speed.
- Add hot milk gradually to egg substitute and sugar mixture.
- Pour into pan and heat mixture until it coats spoon.
- Add vanilla.
- Add peaches that have been blended.
- Pour mixture into 1 gallon ice cream freezer container.
- Add skim or nonfat milk until container is 3/4 full and freeze according to freezer directions.
- Freeze leftover in individual paper cups for easy serving.
