Lemon and herb chicken on a bed of rice
- 1 full chicken: cut into pieces
- 1 375g lemon & herb marinade
- 1 salt & pepper to taste
- 1 cup mixed peppers - red/yellow & green
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 1/2 cup chopped onion
- 1 tsp tumeric
- CHICKEN : place all the chicken in a bowl and add all the marinade and let it marinade over night or at leat 5 hours.
- Bake chicken at 220 for 45minutes
- Rice- cook you choice of rice and once cooked set aside.
- In a pot add 2 tbsp of cooking oil and add onion; and mix peppers and all the spices.
- Keep stirring and once cooked add your rice and mix well.
- Add salt and pepper for taste.
- Plating: in a serving bowl place the rice first and place your meat and garnish with micro leaves
