Burritos
- 1 pkg. 10-inch flour tortillas
- 1 lb. ground beef, brown and drain
- 1 jar salsa
- 1 pkg. burrito seasoning mix
- 2 small potatoes, diced real small and cook until tender
- grated Cheddar cheese
- To brown ground beef, add the burrito seasoning mix and water as called for on package; stir in well, then add the salsa and mix in also.
- Simmer (on low) for 15 minutes, then add cooked, drained potatoes.
- Simmer 5 more minutes.
- Next, place about 3 to 4 tablespoons of meat mixture onto a tortilla, sprinkle with 2 tablespoons of cheese, then tightly roll tortilla up and secure with toothpick.
- Do all the tortillas, then on a flat skillet place 3 or 4 tortillas and pat butter onto them on both sides and brown evenly.
- Finish all tortillas and take toothpicks out. Serve with sour cream.
- These reheat well also.
