Butter Brickle Surprise Cookies

  1. Combine butter and brown sugar in large bowl; beat at medium speed until creamy.
  2. Add egg and vanilla; continue beating until well mixed.
  3. Reduce speed to low; add flour, baking powder and salt.
  4. Beat until well mixed.
  5. Stir in toffee bits.
  6. Cover; refrigerate 30 minutes.
  7. Heat oven to 350F.
  8. Place coarse grain sugar into small bowl.
  9. Shape dough into 1 1/4-inch balls.
  10. Press 1 chocolate candy into each ball; shape dough around candy to completely cover.
  11. Dip tops of balls in sugar.
  12. Place 2 inches apart onto ungreased cookie sheets.
  13. Bake for 8 to 10 minutes or until edges begin to brown.
  14. Cool 1 minute on cookie sheet; remove to wire cooling rack.
