Cold Watermelon Soup

  1. Cut off the watermelon rindyou can save it for making pickles, if youre into that (I confess, Im not).
  2. Using a melon ball, scoop out two balls of watermelon for garnish.
  3. Cut the rest of the melon into chunks.
  4. Trim the scallion, preserving the tender green, and chop roughly.
  5. Put the watermelon, scallion, and wine, along with several drops of lime juice, into a food processor or a blender, and puree.
  6. Taste and adjust flavors; you may want more lime juice.
  7. Turn into a chilled bowl and garnish with the watermelon balls and mint leaves.
