Bananas Foster

  1. In a small bowl, combine brown sugar and cinnamon with a fork, set aside.
  2. In a heavy 12-inch skillet, melt margarine over medium heat.
  3. Add cinnamon-sugar mixture, stir until sugar melts.
  4. Pour in banana liqueur and 1/4 cup rum.
  5. Cook, stirring, until syrupy and thick (about 5 minutes).
  6. Add bananas, lightly coating with syrup.
  7. Add remaining 1/4 cup rum, swirl pan, ignite rum.
  8. Quickly swirl pan, cook, basting bananas with sauce until flame goes out. Remove from heat.
  9. Place 2 banana slices on each of 4 plates, side by side.
  10. Place
  11. scoop of ice cream on top of each serving. Drizzle with sauce.
  12. Decorate with mint, if desired.
  13. Serve immediately.
