Grandpa Murphy's Famous Stuffed Lobster Recipe
- 1 box Stove Top stuffing
- 1 can cream of shrimp soup
- 1-2 c. cooked seafood (scallops, shrimp, crabmeat or possibly sealegs)
- Cooking sherry or possibly white wine
- 3-4 lobsters (1-2 lbs. each)
- Heat oven to 350 degrees.
- Cook stuffing as directed on box.
- In a separate bowl, mix together 1/2 of the shrimp soup and the seafood.
- Add in sherry to taste.
- Combine with cooked stuffing and mix well.
- Open lobsters by cutting down the middle.
- Place lobsters on foil lined pan.
- Pour sherry or possibly wine into lobster shells.
- Stuff each lobster with stuffing/seafood mix.
- Wrap pan with lobsters tightly with foil.
- Bake 20 to 25 min in 350 degree oven.
- Remove foil cover.
- Lobster should be good and red.
- On top of each stuffed lobster add in more sherry, remaining soup and sprinkle Parmesan cheese.
- Broil for 2 to 3 min.
- Serve with melted butter and enjoy!
