  1. In small skillet, saute the onions, bell pepper, mushrooms in the butter, on high heat, until almost caramelized.
  2. Spray a 9x13" glass cake pan with pan coating.
  3. Set aside.
  4. In large bowl, combine all 3 types of potatoes, the sauteed onion mixture, Alfredo sauce, chicken broth, Velveeta , the garlic salt & pepper.
  5. Consistency should be thick.
  6. It will thin some when cooked.
  7. Pour into prepared pan & bake in 350 oven for 1 hour.
  8. Remove from oven & sprinkle on the shredded cheddar cheese.
  9. Return to oven for about 5 minutes, until cheese melts.
  10. Remove from oven & let set on counter about 10 minutes.
  11. Just before serving, sprinkle on the green onions.
