One-Pot Quinoa and Chicken Stew
- 1/4 cup Kraft Extra Virgin Olive Oil Italian Pesto Parmesan Dressing
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 red pepper, chopped
- 3 cups chopped rotisserie chicken
- 2 cups 25%-less-sodium chicken broth
- 2 cups water
- 1 Yukon gold potato (225 g), peeled, cut into 1/2-inch cubes
- 1/2 cup quinoa, uncooked, rinsed
- 1 cup frozen mixed vegetables (carrots, corn, green beans, peas)
- 1/4 cup Kraft 100% Parmesan Aged Grated Cheese
- Heat dressing in large saucepan on medium heat.
- Add onions and peppers; cook 5 min., stirring frequently.
- Add chicken, broth and water; stir.
- Bring to boil; cover.
- Simmer on medium-low heat 10 min., stirring occasionally.
- Stir in potatoes; simmer 5 min.
- Add quinoa; stir.
- Simmer 10 min.
- or until quinoa is tender, stirring in frozen mixed vegetables after 5 min.
- Remove from heat.
- Stir in cheese.
