One-Pot Quinoa and Chicken Stew

  1. Heat dressing in large saucepan on medium heat.
  2. Add onions and peppers; cook 5 min., stirring frequently.
  3. Add chicken, broth and water; stir.
  4. Bring to boil; cover.
  5. Simmer on medium-low heat 10 min., stirring occasionally.
  6. Stir in potatoes; simmer 5 min.
  7. Add quinoa; stir.
  8. Simmer 10 min.
  9. or until quinoa is tender, stirring in frozen mixed vegetables after 5 min.
  10. Remove from heat.
  11. Stir in cheese.
