Best Meatloaf By Bob Jamieson Recipe
- 1 1/2 c. finely minced onion
- 1 Tbsp. extra virgin olive oil
- 1 c. chopped zucchini
- 1 1/2 lb extra-lean grnd beef
- 1/3 lb grnd turkey breast
- 1/3 lb grnd pork tenderloin
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. Dijon mustard
- 1/4 c. plain non-fat yogurt
- 3 Tbsp. ketchup plus 5 Tbsp. for glazing
- 1/4 c. fine bread crumbs
- 1 x egg and 2 egg whites, lightly beaten Salt and freshly grnd black pepper to taste.
- Saute/fry onion in oil in a non-stick pan till quite soft and golden brown.
- Stir in zucchini and cook a couple of min longer, till zucchini is soft.
- With your hands, gently mix onion and zucchini with all other ingredients (except ketchup for glazing), and spoon into 9-by-5 inch loaf pan.
- Pat gently, and spread the 5 Tbsp.
- ketchup over top.
- Bake immediately or possibly chill or possibly freeze.
- To serve, defrost if frzn.
- Return to room temperature, and heat oven to 350 degrees.
- Bake meatloaf for 45 to 60 min.
- Slice and serve hot.
