Crunchy Butternut Squash Fries

  1. Heat oven to 425F.
  2. Line two baking sheets with aluminum foil and spray with nonstick cooking spray.
  3. Microwave squash on HIGH for 2 minutes.
  4. Cut squash in half length and scoop out the seeds.
  5. Peel squash with vegetable peeler.
  6. Cut into quarters.
  7. Cut quarters into 4x3/4-inch sticks.
  8. Mix together the cornflake crumbs and the seasoned salt in a shallow dish.
  9. Pour the maple syrup into a second shallow dish.
  10. Dip the squash sticks into syrup and then coat crumb mixture.
  11. Place coated sticks in a single layer on a prepared pan.
  12. Bake for 45 to 60 minutes or until squash sticks are fork tender.
