Sausage And Cornbread Pie
- 1 lb. bulk pork sausage
- 1 c. chopped green onions
- 1 (11 oz.) can condensed Cheddar cheese soup, undiluted
- 1 (28 oz.) can tomatoes, drained and chopped
- 1 (4 oz.) can chopped green chilies
- 1 c. diced potatoes
- 1 tsp. ground coriander
- 1 c. Bisquick baking mix
- 2/3 c. self-rising cornmeal
- 2 Tbsp. chopped green onions
- 1/2 c. milk
- 1 egg
- 1/2 c. shredded Cheddar cheese (2 oz.)
- Heat oven to 400u0b0.
- Cook sausage and 1 cup onions in a large skillet until pork is brown; drain and return to skillet.
- Add soup and next 4 ingredients.
- Bring to a boil. Reduce heat and simmer 10 minutes. Spoon mixture into greased 3-quart casserole. Combine baking mix and remaining ingredients. Spread over sausage mixture. Bake 15 minutes or until toothpick inserted in center of topping comes out clean.
- Makes 6 servings.
