Chinese Salad
- 1 bunch bok choy
- 6 green onions, chopped
- 12 cup slivered almonds
- 14 cup butter
- 2 (3 ounce) packages oriental-flavor instant ramen noodles
- 1 teaspoon soy sauce
- 12 cup white sugar
- 14 cup olive oil
- 12 cup white vinegar
- Place chopped bok choy (napa) and onions in fridge to cool.
- Melt butter in skillet, add almonds and noodles (broken into small pieces).
- Saute until golden.
- Add dry flavor packets from noodles, mix with almonds and noodles.
- Let cool.
- Mix with napa and onions just prior to serving.
- Dressing: Combine remaining ingredients in cruet and shake to combine.
- Dress salad.
- Refrigerate.
