Spicy Whole Wheat Zucchini Muffins
- 1 c. whole wheat flour
- 3/4 c. white flour
- 1/4 c. wheat germ
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- dash of salt
- 1 c. milk
- 1 egg, beaten
- 1/4 c. vegetable oil
- 1 c. grated unpeeled raw zucchini
- 1/3 c. raisins
- In a medium size mixing bowl, mix flours, wheat germ, sugar, baking powder and soda, spices and salt.
- Set aside.
- Pour milk in a 2-cup measuring cup.
- Add egg and oil and blend well.
- Pour milk mixture over dry ingredients; add zucchini and raisins.
- Stir just enough to moisten.
- Do not overmix.
- Spoon batter into greased muffin cups.
- Bake at 400u0b0 for 20 to 22 minutes.
