Easy Gazpacho
- 2 slices white bread
- 1/3 cup KRAFT Balsamic Italian Dressing
- 2 x 425g canned Italian tomatoes
- 500ml tomato juice
- 1 green capsicum, diced
- 1 small red onion, sliced
- 1 Lebanese cucumber, diced
- 1 tablespoon brown sugar
- Soak bread in dressing for 5 minutes.
- Puree tomatoes, tomato juice, bread, green capsicum, onion, cucumber and brown sugar until smooth.
- Season to taste.
- Refrigerate, covered until cold.
- Serve with a swirl of sour cream.
