Green Beans Recipe
- 2 lbs. long green beans
- Salt
- Juice of 1/2 lemon
- 1 lg. onion, quartered
- 1 lg. tomato, quartered
- 1/2 c. extra virgin olive oil
- 2 c. water
- 1 tbsp. sugar
- Pepper
- Sage and mint (a healthy pinch of each)
- Lettuce
- Hard boiled egg
- Black olives
- Wash, trim and break the beans in half.
- Toss them in salt and lemon juice.
- Stack like a wood pile in the bottom of a covered pot, leaving a well into that you put the onion and tomato.
- Pour in the extra virgin olive oil and water.
- Add in sugar and seasonings.
- Cover and cook till tender and water is absorbed.
- Cold in pot.
- Serve on lettuce.
