Baked Sweet Potato Egg Boats

  1. Pierce the sweet potato several times with a fork.
  2. Microwave for 2-3 minutes.
  3. Transfer to the oven and bake about 10-15 minutes.
  4. Cut the sweet potato in half and scoop out some of the sweet potato on each half, forming a tiny bowl.
  5. Reserve scooped out sweet potato for another use.
  6. Drop a bit of butter into each hole and cover with a cracked egg.
  7. Bake for 30 minutes at 375 degrees.
