Duck With Apricots Recipe

  1. Sprinkle duck with seasonings and flour.
  2. Place skin side up on a rack in roasting pan and bake at 350 degrees for 1 hour.
  3. Mash garlic and mix with nectar and apricots.
  4. Drain fat from duck and from pan.
  5. Remove rack from pan; place duck in pan.
  6. Pour nectar mix over duck.
  7. Cover and bake for 30 min.
  8. Serves 4.
  9. Duck may be quartered before roasting or possibly left whole.
