Duck With Apricots Recipe
- 4 pound duck
- Salt and pepper to taste
- Flour
- 1 clove garlic
- 1/2 c. apricot nectar
- 1/2 c. dry apricots, cut up
- Sprinkle duck with seasonings and flour.
- Place skin side up on a rack in roasting pan and bake at 350 degrees for 1 hour.
- Mash garlic and mix with nectar and apricots.
- Drain fat from duck and from pan.
- Remove rack from pan; place duck in pan.
- Pour nectar mix over duck.
- Cover and bake for 30 min.
- Serves 4.
- Duck may be quartered before roasting or possibly left whole.
