Skipper'S Shrimp Creole
- 3 Tbsp. oil
- 1 bunch green onions and tops
- 3 ribs chopped celery
- 1 (1 lb.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (10 1/2 oz.) can beef broth
- 1 Tbsp. chili powder
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 1 tsp. thyme
- 1 tsp. crushed bay leaves
- 2 Tbsp. Worcestershire sauce
- 1 good dash hot pepper sauce (like Tabasco)
- 1 c. long grain rice
- 1/2 c. chopped green pepper
- 12 oz. shrimp
- Cook onions and celery in oil until tender.
- Add celery, tomatoes, tomato sauce, broth, chili powder, salt, sugar, thyme, bay leaves, Worcestershire sauce and hot pepper sauce.
- Cook 45 minutes, then add chopped green pepper and shrimp.
