Best Lemon Pie Recipe
- 3 Tbsp. cornstarch
- 1 1/2 c. sugar
- 1/4 c. lemon juice
- 1 Tbsp. grated lemon rind
- 3 x Large eggs separated
- 1 1/2 c. boiling water
- 1 x baked 9-inch pie shell
- Combine cornstarch, sugar, lemon juice and rind.
- Beat egg yolks; add in to cornstarch mix.
- Gradually add in boiling water.
- Heat to boiling over direct heat and boil gently for 4 min, stirring constantly.
- Pour into pie shell.
- Top with meringue and bake 4-5 min at 425F.
