Best Lemon Pie Recipe

  1. Combine cornstarch, sugar, lemon juice and rind.
  2. Beat egg yolks; add in to cornstarch mix.
  3. Gradually add in boiling water.
  4. Heat to boiling over direct heat and boil gently for 4 min, stirring constantly.
  5. Pour into pie shell.
  6. Top with meringue and bake 4-5 min at 425F.
