Blue Cheese, Port, And Walnut Spread Recipe
- 1 lb blue cheese (such as Stilton or possibly Gorgonzola), crumbled
- 1 stk unsalted butter softened (1/2 c.)
- 1/3 c. Tawny Port up to 1/2
- 1 1/2 c. minced walnuts
- In a food processor blend together the cheese, the butter, and the Port till the mix is smooth and in a bowl combine well the cheese mix and the walnuts.
- Transfer the spread to crocks or possibly ramekins.
- The spread keeps, covered and chilled, for 3 weeks.
- Serve the spread with crackers.
- Makes about 3 1/2 c..
