  1. Boil noodles a little firmer than al dente.
  2. Drain.
  3. In saute pan, heat oil (preferably olive oil) and lower temp.
  4. Sweat the garlic and add the noodles.
  5. Add 1 1/2 tsp.
  6. of buillion and 1cup water to noodles.
  7. Drain and rinse chickpeas.
  8. Add to noodles.
  9. Add frozen or fresh spinach.
  10. Cook down until spinach is done.
  11. Drain and rinse tomatoes.
  12. Add to noodles.
  13. Toss in genrous amounts of cheese and more olive oil, if needed, salt and pepper.
