Salmon Cakes Florentine Recipe
- 1/2 c. plain yogurt
- 2 teaspoon chopped onion
- 1 1/2 teaspoon snipped fresh dill
- 1/8 teaspoon dry mustard
- 1 (15 1/2 ounce.) can salmon, liquid removed, skin and bone removed
- 1 (10 ounce.) pkg. frzn spinach, thawed and liquid removed
- 3/4 c. Quaker oats
- 1/4 c. lowfat milk
- 1 egg white, beaten
- 2 tbsp. onion, chopped
- Combine first 4 ingredients; mix well.
- Chill.
- Combine remaining ingredients; mix well.
- Shape mix into 6 oval patties.
- Place on rack of broiler pan about 4 inches from heat.
- Broil about 3 min on each side or possibly till golden and heated through.
- Serve with sauce.
- Note: Two 6 1/2 or possibly 7 ounce.
- cans of chunk tuna may be substituted.
