Scalloped Potatoes With Sour Cream And Chives Recipe
- 4 med. potatoes
- 1 c. lowfat sour cream
- 2 Large eggs, well beaten
- 2 tbsp. lowfat milk
- 3 tbsp. minced chives
- 1/2 teaspoon salt
- 1/8 teaspoon freshly grnd black pepper
- 1 c. shredded sharp Cheddar cheese

- Cook the potatoes in lightly salted water till just tender.
- Allow to cold slightly, then peel and slice.
- There should be about 3 c. of sliced potatoes.
- Arrange the potatoes in a buttered, shallow 1 1/2 qt baking dish.

- Combine the lowfat sour cream with the beaten Large eggs, lowfat milk, chives, salt and pepper.
- Pour over the potatoes in the baking dish and sprinkle with the shredded cheese.

- Bake at 350 degrees for about 30 min, till heated through and lightly browned.
