Lemony Skillet Asparagus
- 1/2 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 small yellow pepper, cut into strips
- 1 cup sliced fresh mushrooms
- 1 small red onion, thinly sliced
- 1 lb. fresh asparagus spears, trimmed
- 1/4 cup KRAFT Shredded Parmesan Cheese
- Mix dressing and lemon juice.
- Heat 1/4 cup dressing mixture in large nonstick skillet on medium-high heat.
- Stir in peppers, mushrooms and onions; cook 3 to 5 min.
- or until crisp-tender, stirring occasionally.
- Add asparagus and remaining dressing mixture; stir.
- Cover; simmer on medium-low heat 5 to 7 min.
- or until asparagus is crisp-tender.
- Serve topped with cheese.
