Cucumber-Lime Gelatin

  1. Add boiling water to gelatin mixes in medium bowl; stir 2 min.
  2. until completely dissolved.
  3. Stir in 1-1/2 cups cold water.
  4. Refrigerate 45 min.
  5. or until thickened, stirring every 15 min.
  6. Add remaining cold water to ice in separate medium bowl.
  7. Use vegetable peeler to peel 6 thin lengthwise slices from cucumber; add to ice water.
  8. Seed and shred remaining cucumber; stir into gelatin.
  9. Pour gelatin into 9x5-inch loaf pan sprayed with cooking spray.
  10. Refrigerate 3 hours or until firm.
  11. Unmold onto plate just before serving.
  12. Garnish with cucumber slices and pepper.
