Cucumber-Lime Gelatin
- 1-1/2 cups boiling water
- 2 pkg. (3 oz. each) JELL-O Lime Flavor Gelatin
- 2 cups cold water, divided
- 1 cup ice cubes
- 1 large cucumber, peeled
- 1/4 tsp. ground hot red pepper
- Add boiling water to gelatin mixes in medium bowl; stir 2 min.
- until completely dissolved.
- Stir in 1-1/2 cups cold water.
- Refrigerate 45 min.
- or until thickened, stirring every 15 min.
- Add remaining cold water to ice in separate medium bowl.
- Use vegetable peeler to peel 6 thin lengthwise slices from cucumber; add to ice water.
- Seed and shred remaining cucumber; stir into gelatin.
- Pour gelatin into 9x5-inch loaf pan sprayed with cooking spray.
- Refrigerate 3 hours or until firm.
- Unmold onto plate just before serving.
- Garnish with cucumber slices and pepper.
