Creamy Broccoli Soup With Cheese

  1. If frozen broccoli is used, thaw broccoli in colander under hot tap water about 30 seconds.
  2. In larger saucepan, cook and stir onion in butter, about 2 minutes.
  3. Stir in flour.
  4. Add broth, whipping cream and broccoli.
  5. Heat and stir until mixture comes to a boil.
  6. Cook and stir (1 minute if using frozen broccoli or 5 to 6 minutes for fresh broccoli), until tender.
  7. Add cheese, lemon juice and pepper.
  8. Heat until cheese melts.
  9. Stir occasionally.
