Zucchini Bread
- 2 c. unbleached white flour
- 1 c. whole wheat pastry
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. sugar
- 1 tsp. cinnamon
- pinch of nutmeg
- 1/2 c. raisins
- 1/2 c. chopped pecans
- 1 whole egg plus 1 egg white or egg replacer
- 1 tsp. vanilla extract
- 1 c. skimmed milk, rice milk or soy milk
- 1/2 c. applesauce
- 2 c. grated zucchini
- Preheat oven to 325u0b0.
- In a large mixing bowl, combine dry ingredients.
- Add raisins and pecans.
- Make a well in center.
- In separate bowl, lightly beat eggs and egg white or egg replacer. Stir in vanilla, milk and applesauce.
- Fold in zucchini.
