Shrimp Gumbo

  1. Heat oil in Dutch oven; add flour and cook, stirring constantly until mixture is browned (about 10 minutes).
  2. Stir in onion and celery.
  3. Cook over medium, about 5 minutes.
  4. Add chopped tomatoes with liquid, water, bay leaf, garlic, salt and pepper. Cover and simmer 20 minutes.
  5. Add okra.
  6. Cover and simmer 15 minutes.
  7. Add shrimp; cook 3 minutes more.
  8. Remove from heat and stir in file powder.
  9. Remove bay leaf and serve in bowls over rice.
