Cheddar Jack & Bacon Corn Cakes

  1. Mix flour, cornmeal and baking powder in medium bowl until blended.
  2. Add 1 Tbsp.
  3. butter, milk and corn; mix well.
  4. Melt remaining butter in medium skillet on medium heat.
  5. Pour cheese mixture into shallow dish.
  6. Drop tablespoonfuls of cornmeal batter, 1 at a time, in cheese mixture, turning to evenly coat.
  7. Add, in batches, to skillet; cook 1 to 2 min.
  8. on each side or until firm to the touch.
  9. Sprinkle with chives.
  10. Serve warm.
