Herbes De Provence Roast Chicken

  1. Preheat oven to 425 degrees F. Finely break up the lavender if large and mix with the basil, tarragon, thyme, sage and oregano.
  2. Set aside.
  3. Clean chicken and dry with paper towels.
  4. Rub chicken with the olive oil and then with the herbs.
  5. Salt and pepper to taste.
  6. Place chicken on a broiler pan and bake for 30-45 minutes until the chicken is done to 160-165 degrees F. Let rest for 5 minutes and serve with your favorites sides.
