Chilled Matcha Soba with Grated Yamaimo

  1. Boil the matcha soba to your desired firmness.
  2. It should take about 3-4 minutes.
  3. Rinse in ice water and drain in a strainer.
  4. Cut the cucumber and green onions as shown.
  5. Put the chilled matcha soba and mentsuyu in a dish, then top with the grated yamaimo, cucumber, onion, and egg.
